Recipe

I don't know if you guys have clicked through to Molly's blog and her Recipe blog, but they are both awesome. I love her recipe list. She has inspired me to share a yummy goulash recipe I recently started making, adapted from a Rachael Ray recipe. In the original, it is actually ground chicken (which I can never find) and the mix is stuffed into tomatoes. That was too much for my kids to handle (they stalled at the sight of the whole tomato), but the insides were good, so I just chopped up grape tomatoes into the mix and served it all in a bowl. The dill and sour cream make it taste kind of unusual and yummy (yum-o, as Rachael would say).

Turkey and Wild Rice in a Bowl
1/2 cup wild rice
1 1/2 cups grape tomatoes, cut in half
1/2 medium onion, diced
4 oz mushrooms, coarsely chopped
1 lb. ground turkey
1 Tbsp paprika
1/2 cup sour cream
1/2 cup chopped fresh dill
Salt

1. Prepare the wild rice according to package instructions (I like to cook it with chicken bouillon and a Tbsp butter).
2. In a large skillet, heat 2 Tsbp olive oil and cook onion until softened. Add mushrooms and cook for 1 minute. Add ground chicken and cook for 6 minutes, or until cooked through, breaking up the meat until crumbly. Add some salt to the chicken. Add tomatoes, cook for a minute. Remove from heat and stir in cooked wild rice, sour cream, and dill. Add salt to taste.
3. Stir and serve.
